5 mm flexible plywood cross grain is the board that bends the opposite way to the long grain sheet of the same thickness. Which of the two you need depends entirely on which way your curve runs, and they are not interchangeable.
It does the same tight radius work as the long grain sheet, on curves running the other way: curved bar and counter fronts that sweep around a bend, arched openings and door heads, curved bulkheads, and the fronts of curved seating. At 5 mm it will come round a noticeably tighter radius than the 8 mm board, so it is the one for anything with a real curve in it rather than a gentle sweep.
Cutting and handling
Support the whole sheet when you cut it, use a fine toothed blade and go steadily. Carry and store it flat: a sheet stood on edge folds under its own weight and creases, and a crease in bendy ply is a crack waiting to open once you glue it round a curve.
Fixing and painting
For a permanent curve, glue two layers over a former rather than relying on one sheet fixed to ribs. Where it is going on ribs, fix at close centres and check the line by eye along the curve before the fixings go in, because a curved surface catches light along its whole length and shows every flat.
Where not to use it
Picture the finished piece and ask which dimension of the sheet has to follow the curve and which stays straight. That answers which version you need, and getting it wrong is the single most common mistake with bendy ply, with no recovering from it. If the shape is at all awkward to describe, ring us with the radius and the height before you order rather than after.
